vegan scalloped potatoes (easy, dairy free, gluten free)
With Thanksgiving coming up fast, here’s one of my favorite side dishes that’s an alternative to the traditional mashed potatoes: vegan scalloped potatoes. Even though there isn’t bit of dairy to be found, they taste very close to the original. In fact, when one of my young nephews tried it, he said he, “really liked these cheesy potatoes.” Total vegan recipe win!! Did I let him in on the dairy-free secret? Nope. But I’m sharing it with you. Let me know what you think! Vegan Scalloped Potatoes (printable version below) 6 medium potatoes, thinly sliced 1 small onion, thinly sliced 4 garlic cloves, minced 1 3/4 cup…
serving up sides: smashed potatoes and roasted broccoli (vegan, gluten free, dairy free)
(this post contains affiliate links which help fund this blog but at no cost to you) I was working on this post two weeks ago and then life happened. Or rather, bed bugs. Let’s just say “don’t let the bed bugs bite” is so not funny or cute to me anymore. Thankfully, we have the little buggers taken care of, but it was a lot of work. Good, but tiring at the same time. And now back to our regularly scheduled program… It’s the night before the Royal Wedding and this feels like a very fitting recipe to share – so British, but with an nontraditional twist. I am…
easy black bean dip (vegan, dairy free, gluten free)
I have a gift for you today…an incredibly easy recipe for you to make and I bet you have all of the ingredients in your pantry. It’s been one of my favorites for years and is inspired by a recipe I found on the Whole Foods recipe site before I even made the transition to a plant-based diet: Black bean dip. Although the “dip” word would make you think this is appetizer-only, I love making it for our main meal with a side of raw veggies and hummus! All of the “meaty” plant-based protein coming from the beans makes it hearty enough for that. Because this black bean dip…
thanksgiving recipe roundup (vegan, plant-based)
I cannot believe Thanksgiving is one week away!! How did that happen?! If you’re new(ish) to a plant-based/vegan diet, I’m guessing Thanksgiving can feel rather…intimidating. After all, the main feature of this holiday meal is the turkey. (Can you even hear “Thanksgiving” without picturing the turkey? I can’t!) And holidays usually mean eating with people who probably aren’t eating the way you at best or make you feel looney tunes for choosing a different diet altogether. But I’m here to encourage you that Thanksgiving – and all other holiday meals – can still be looked forward to and even give you chance to share how amazing a vegan diet can…
apple cabbage slaw with apple cinnamon dressing (vegan, raw, paleo, gluten free, no added sugar)
In the apple vs. pumpkin debate, I fall in with the apple crowd. What about you? It’s been a great year for apples here in Northeast Ohio…especially the organic red apples we’ve been enjoying from my parent’s neighbors. Which got me brainstorming ideas for a fresh fall apple-based salad… Voila! Apple cabbage slaw with apple cinnamon dressing. I can eat it like candy. My favorite thing? I can’t decide. It’s a toss up its crunchy sweetness (but without any added sugar!) or being the perfect balance to the heavier comfort food dishes because the apple cinnamon dressing is free of heavier oils found in traditional coleslaw. The apple cabbage…
tuscan roasted tomatoes with sesame parmesan (vegan, dairy free, nut free, gluten free)
As much as I love sharing the fun, creative recipes (like these matcha coconut lime energy bites or these weeknight tacos), I also love giving equal play to recipes that are meant for the every day or moments when you’re not sure what to throw together. Like these tuscan roasted tomatoes. I came up with these lovelies one Sunday evening when we were going to have a mishmash of leftovers and family coming over at the last minute. Throwing together a medley of vegetables prepared in a number of ways is still one of my favorite things to do…it speaks of abundance and simplicity and letting my pickier (ahem) eaters…
